This is a great recipe for any event. Just small handheld sweets makes any guest happier. Each mini cheescake can be topped with fruit or sauce of your choice. My personal favorite is putting chocolate covered strawberries on top for that extra crunch. This easy recipe won't have you in the kitchen for hours. Try this out! It's the one dish that's bound to impress everyone.
Preheat the oven to 325 degrees. Line a muffin pan with paper liners or use a silicone muffin pan.
Put graham crackers in blender. Combine graham cracker, butter and sugar in a small bowl. Texture should look like wet sand. Divide crust evenly in muffin pan and pat down. Bake for 5-6 minutes. Let cool.
Beat cream cheese in a stand mixer. Add sugar, eggs and vanilla. Mix until well combined. Make sure to scrap the sides of the bowl.
Pour mixture into muffin pan. Fill almost all the way to the top. About 2 tablespoons of filling for each.
Place in oven and bake for 20 minutes or until the cheesecakes are set. They will still jiggle a bit. Do not over cook them, if they start to crack they are getting over cooked.
Allow them to cool completely. Place in the fridge to chill and serve when ready!
